Rainbow Cake



Well this colourful creation took 7 hours to make.

I have never attempted anything quite this grand, but I wanted to do something special for my little boy's first birthday.

I took my inspiration from Jodi at Meaningful Mama. See her amazing cake here. I could not confront the fondant awesomeness she created, but I did have a go at the cake.

I used Jodi's White Velvet Cake Recipe which tastes wonderful and I carefully observed her instructions in the Cake Making 101 tutorial. I could not have been happier with the result.

I decided to make a white butter cream for the outside. This was also a first for me. I used my sisters recipe. She uses Lurpac Danish Butter as it is white in colour and gives the best results. We added a generous squirt of a product called Icing White to achieve the bright white colour. We required four batches of butter cream to cover the cake.

Butter Cream

125g Lurpac Danish Butter (room temperature)
300g Icing Sugar
Icing White (as per instructions)

Method

1. Beat the butter and sugar for approximately 15 minutes until soft and creamy.
2. Add Icing White to achieve desired colour, combine until colour is even throughout.

Butter cream can be prepared the day before but will need a small amount of re-beating prior to application.

And here we have a happy little birthday boy with the most generous slice of all!

    1. I thought he would want to smash it. Instead he carefully broke pieces off and calmly ate them. I had to remove the cake at a certain point! You should have seen the nappies the next day lol

    1. I haven't heard about the titanium, you can buy it from cake making shops and speciality food stores. We got ours from a coffee shop here in town, it was the last bottle. I'll get the exact brand name from my sister and you might be able to Google it.

    There is a white shortening stuff that I found at a cake decorating place in Sydney. It comes in containers that last for a while without refrigeration and the pure white means that the colors mix well. But them again, I love me a butter icing! You did soooo well! Denyse xx

    That rainbow cake is truly amazing! I remember seeing the photos on IG and thinking, "Wow! Just.Wow!"

  17. I am going to use the White Velvet Cake recipe for the cake I am making Miss Z for her 2nd birthday party next weekend! Thanks for sharing as I have been looking for a nice recipe too. Which brand did you use for cake mix? Does White wings do a White Cake Mix?
