Bent on Food Giveaway

Salmon and Blue Cheese Pizza with Caramelised Onion and Thyme Jam

Twinkle in the Eye is pleased to announce a new partnership with Bent on Food Cafe and Regional Produce Store and the Bent on Food Cookery School. Over the next twelve months I will be sharing inspired recipes using Bent on Foods award winning products and giving you the chance to win your own.

I will also be attending the Bent on Food Cooking School and sharing tips from celebrated Chef's. If you are lucky enough to live in the beautiful Manning Valley you will also have the opportunity to attend the Cooking School in cooking events organised by me!

Today's recipe showcases Bent on Foods latest product:

Ingredients

Quick Pizza Dough
Makes 2 pizzas

2 cups of plain flour
8g sachet instant dry yeast
1/2 teaspoon caster sugar
3/4 cup warm water
2 tablespoons of olive oil
Pinch of salt

Topping

4 slices of smoked salmon
200g blue cheese

Method

1. Preheat oven to 220 degrees celsius.
2. Sift flour into a large bowl. Add yeast, sugar and salt.
3. Combine warm water and oil. Add to flour mixture. Mix until dough comes together.
4. Turn onto a lightly floured surface. Knead for 8 minutes, adding more flour if necessary, or until elastic (when you press the top it should bounce back and leave no indentation). Cut dough in half.
5. Roll out dough using a lightly floured rolling pin and place on pizza baking trays or stones.
6. Liberally spread the Bent on Food Caramelised Onion and Thyme Jam across pizza bases.
7. Roughly tear salmon strips and spread evenly across pizza bases.
8. Crumble or slice the blue cheese (depending on consistency) and spread evenly across pizza bases.
9. Bake for 15 mins or until bases are crisp and golden.
10. Devour and enjoy!

  6. Ooh, I'd mix it with Greek yoghurt, garlic, salt and pepper for a dip with gluten free crackers. Or I could toss it through pasta with olives, capers, chopped salami and red wine and tomato sauce, yum! It'd also be lovely on a gourmet toasted sandwich, with gooey camembert cheese and smoked ham. :)
