This was not only the best banana cake I have ever made, it's the best banana cake I've ever eaten!
Ingredients
125g butter
1 cup sugar
2 eggs, well beaten
1 teaspoon vanilla
2 tablespoons of milk
1 teaspoon of bicarbonate soda
3 bananas, mashed
1 1/2 cups self raising flour
Lemon Icing
1 tablespoon of soft butter
1 1/2 cups icing sugar
Lemon juice
Method
Preheat oven to 180 degrees celsius
Grease a deep 20cm round tin
Cream butter and sugar until fluffy.
Add eggs and combine.
Mix through vanilla and milk in which soda has been dissolved.
Add bananas. Fold through mixing to an even consistency.
Pour into tin and bake in oven for 35-40 minutes.
Lemon Icing
Combine butter and icing in a bowl.
Add enough lemon juice to make a soft paste and mix well.
Sprinkle with coconut if desired.

Oops it is 1 1/2 cups of SR flour. Good luck - it's a great cake!
